The problem in a restaurant is grease, not dust. Cooking oil leaves the kitchen as an aerosol, travels further into the dining room than most owners expect, and lands on the indoor coils as a sticky film that ordinary dust then bonds to. It cannot be rinsed off, it blocks airflow faster than anything else we deal with, and it is the reason a dining room can smell faintly of last week's service even when the kitchen is spotless. How we schedule it
A restaurant only has two windows: before service and after close. We take whichever suits you and work the dining room and kitchen units in one visit, because doing them separately means the grease from the untouched half is back on the clean coils within weeks. Venues on a contract get a fixed slot in the cycle. Where a hood or extraction problem is pushing grease into the AC we will say so — that is a ventilation fix, not a cleaning interval.
